Hash Brown Bake
1 - 32oz bag uncooked hash brown potatoes (the unfrozen kind)
1/2 cup butter, melted
1/2 cup chopped onion
1 can cream of chicken soup
1 - 8oz carton sour cream
1 cup shredded cheddar cheese
Salt & pepper to taste
Preheat oven to 350 degrees. Combine all ingredients and spoon into 2 1/2 quart casserole. Bake for 50 minutes.

Hi there! I love this recipe and actually made it for lunch today...although, I did use frozen hashbrowns and they were fine (as long as they are shredded) and I used cream of mushroom instead of cream of chicken. :) Thank you for all of your great recipes! YOU ROCK!!!!
